I love chocolate and I finally found a healthy dish that is filling and meets my sweet chocolate need with one teaspoon! How great is that?! This is very rich and although looks like pudding in this picture, thickens like a mousse when refrigerated! I was told would also make a fabulous frosting too.
Avocado Chocolate Mousse
- 1 ripe avocado
- 4 oz bittersweet chocolate-I used a good quality dark chocolate bar (70% or more)
- 1/4 cup thick coconut milk-from the top of the can
- 1/2 tsp vanilla extract
- 3 TBSP of honey
- 1 pinch of sea salt
- Melt chocolate and coconut milk in a microwave safe dish, stir until smooth, cool slightly.
- Put remaining ingredients in a bowl and add cooled chocolate mixture. Blend until completely smooth
- Spoon into dessert cups.
