Refried Beans

 

I wanted to make a healthy version of refried beans to add to a taco casserole that I will be making in a future post.  Many of the canned varieties in the store are made with lard and are really high in fat.  This has no lard and fat content is only that within the beans and the olive oil that you cook the garlic cloves in.

Refried beans

  • 2 TBSP olive oil
  • 2 can of pinto beans
  •  1 tsp chili powder
  • 1 tsp cumin
  • salt to taste
  • 1/2 lime, juiced-optional
  • 1 tsp of taco seasoning-previous post (first one)

Heat oil in a skillet over medium heat.  Cook garlic cloves in hot oil, turning once, until brown on both sides.  Smash garlic cloves in a skillet with a fork.  Stir in pinto beans, cumin, chili powder, and salt into mashed garlic and cook until beans are thoroughly heated, about 5 minutes.  Stir occasionally.  Smash bean mixture with a potato masher to desired texture.  Squeeze lime juice over smashed beans and stir until combined.
