Vegan Nacho’s-Guest Post

These nachos really filled the spot of a cheat without a bad ingredient in the bunch!  You’re left feeling full and satisfied without being weighed down by cheese and corn chips and meat, that are found in regular nachos.

 

Vegan Nachos

Bean chips

Top with:

  • Tomatoes
  • Red
  • Pepper
  • Yellow pepper
  • Orange pepper

Bean paste (15 oz kidney beans in a blender with homemade taco seasoning)

vegan cheese, i used Daiya cheddar and pepper-jack

back at 350 degrees for 20-25 mins

 

Homemade taco seasoning

  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 ½ teaspoon ground cumin
  • 1 tea salt
  • 1 teaspoon black pepper
