Baked Oatmeal


I love oatmeal!  The new thing is to make overnight oats.  I don’t like cold oatmeal so this fits the bill for me!  You can make ahead and then heat up a piece to go!  Or warm slightly and eat like a soft oatmeal bar!  Either way you can add any fruit or nut to make it your own!

Baked Oatmeal- taken from Epicurious and then modified

  • 2 cups of rolled oats
  • ½ cup nuts-I used pecans toasted and chopped
  • ¼ cup maple syrup
  • 1 tsp baking powder
  • 1 ½ tsp cinnamon
  • Heaping ¼ tsp sea salt
  • 2 cups almond milk
  • 1 egg
  • 3 TBSP coconut oil-melted
  • 2 tsp vanilla
  • 1 ripe banana
  • 1- 1 ½  cup of berries

Mix oats, baking powder, cinnamon, salt, milk, egg, coconut oil, vanilla and syrup.  This is your oatmeal mixture.

Grease bottom of pan-I used Pam then layer bottom of pan with banana and 2/3 of berries-I alternated banana with berry. Cover fruit with oatmeal mixture. Sprinkle with nuts and remaining berries.

Bake at 375 in the top 1/3 of the oven in an 8 in square dish 35-45 minutes.
