This is a wonderful recipe I found on Gluten Free Goddess website! It is a bit on the heavy side but very moist! Make sure you cook for the entire hour-I have made the mistake of taking out sooner and it was too wet! Use a oven thermometer for accurate temp-makes a world of difference in gluten free baking.
Gluten and Dairy Free Banana Chocolate Chip Bread
- 3 ripe bananas
- 1/3 cup light olive oil or coconut oil
- 1 cup coconut sugar
- 2 tsp vanilla
- 1 ½ cup gf flour blend or baking mix-I use Namaste brand
- 1 tsp baking soda
- 2 ½ tsp baking powder
- ¼ tsp sea salt
- 1 tbsp arrowroot starch
- ½ tsp xantham gum
- 1 rounded tsp cinnamon
- ½ cup chocolate chips
- Mix dry in a separate bowl. Mix wet together with sugar and combine with dry ingredients. Add chips in last.
- Bake at 350 for 1 hour or until loaf is firm and a bit crusty.
